What a delicious spring / summer cake. It was deliciously moist and so beautiful! Organic everything. I used butter and eggs but subbed in almond milk buttermilk and plant-based cream cheese for frosting.

So fresh and bright with the flavors! Roll your berries in flour before folding in to batter to control their color bleeding throughout entire cake! Basil or mint from your garden and a little lemon zest is a beautiful way to decorate.

All hail Emporium Pie's Cloud 9 Pie. There is no other pie once you've tasted this bad boy. Housemade caramel is oozing out on the bottom there. Somehow, it never makes the crust soggy. Oh and there's butterscotch custard and brown sugar meringue.

When I need to use up berries, I have been known to make a moist berry cake. I halve the recipe to make a smaller cake but PILE in the berries. This one has organic blueberries, raspberries and blackberries. I also used a duck egg (instead of chicken), whole wheat flour (instead of white), coconut oil (instead of butter).

I crave a spot of dark chocolate pretty much daily. This is a little spattering of dark choc chips w 5 broken up pecans. Put 'em in oven on warm for a few mins. Then sea salt flaked. Tastes indulgent all melty!

Just love making single serving cakes when I get a dessert craving. I google a recipe, adapt with what I have. Generally sub coconut oil for butter. And use WAY less of it. Like if a recipe called for a stick and I'm halving the recipe, I use like a tablespoon of fat, instead of 4 times that. Nut milk when it calls for "milk." Etc. Play.
