Adapted from a Bon Appetite recipe. Lots of butter in a cast iron pan. The head is basted with the browning butter while it cooks. Great texture - soft but not limp. But WHOA! buttery.
With onion chives and onion tops from my garden. I usually mash with coconut oil and a nut milk such as almond / coconut. Sometimes I use butter.
